Yes, another pumpkin recipe. Maybe I should change the name of the blog. Give me ideas for something that'll alliterate with both pumpkins and mac and cheese.
Ingredients:
- 1 cup pumpkin pureee
- 1/2 cup sugar
- 1/2 cup Splenda
- 1/2 cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon milk
- 1 tablespoon vanilla extract
- 2 cups semisweet chocolate chips
- 1/2 cup chopped walnuts (optional, I skipped them)
Stir in vanilla, chocolate chips and nuts. Drop by spoonful on greased cookie sheet and bake at 350 for approximately 10 minutes or until lightly brown and firm. These are soft, fluffy cookies so they won't get really dark or firm.
